Start Your Day on a Healthy Note with These Gluten-Free and Refined Sugar-Free Breakfast Muffins
Go gluten-free for good with my favourite brekky muffin!
This is a sneak peak of one of my fave recipes in my gluten-free for good program!
Ingredients:
• 1 cup buckwheat flour or millet flour (if you don’t have this and have buckinis instead, just blend 1 cup in a blender until fine)
• 1 banana (best when ripe)
• 1 cup water or coconut water
• 1 tbsp flax seeds or 1 tbsp psyllium husk (optional - this is used in recipes sometimes as a binder)
• 1/4 cup coconut flakes
• Optional add-ins: cinnamon, blueberries (stir in/don’t blend)
Directions:
Pour into a muffin tray and bake in an oven on high temp until they turn golden in colour (~15 minutes)
